I got the recipe from pillsbury.com and changed it a bit to make it a little more applicable with the ingredients I had at the moment.
Serving: 12 muffins
Ingredients
2/3 cup organic light brown sugar
1/2 light butter
2 eggs
2 large ripe bananas
1 2/3 cups all-purpose whole wheat flour
1 teaspoon baking soda
1/2 teaspoon sea salt
1 cup finely chopped fresh strawberries
1/2 white chocolate chips
Instructions
- Preheat oven to 375 degrees.
- Mash the ripe bananas. Or liquefy them in the blender.
- Melt the butter completely.
- In a big bowl, well mix sugar, eggs, bananas and butter together.
- Stir in flour, baking soda, and salt to the mixture in (4.) until well mixed.
- Stir in strawberries and white chocolate chips until evenly distributed in the mixture.
- Line the muffin pan with butter or oil.
- Spoon mixture evenly into each muffin cup.
- Bake for 17-21 minutes, until the toothpick inserted in center comes out clean.
- Done!
Store left over in the fridge. If serve warm, heat in microwave for 20-25 seconds.
Enjoy!
